Thai Iced Tea

Thai tea or Thai iced tea is popular in Thailand, Cambodia and Burma. Recipes vary, but are always made from strongly-brewed powdered black tea. Other ingredients in the powder vary, but may include spices such as star anise,cloves, cinnamon, tamarind and red and yellow food coloring. Thai tea is sweatened with sugar. Milk is added to the top of the glass at serving time and it is served cold.

 

The tea is poured over crushed ice, then whole milk, half and half or cream is poured over the tea and ice, without stirring, before serving--it is never mixed prior to serving--to add taste and creamy appearance. It is traditionally served in a tall glass. Thai tea will be orange in appearance when poured over ice (sometimes aided with food coloring as mentioned above).
