Thai Iced Tea Recipe

Traditionally Thai Iced Tea is made with orange blossoms and vanilla beans, but my version below uses orange and vanilla extract for ease of recipe. If you wished to use vanilla bean you should split the bean and store it in the tea tin to infuse the flavor, then add a small piece to the brew.

 

1 quart water
2 star anise pods
1/2 teaspoon vanilla extract
6 whole cloves
1/2 stick cinnamon, broken into pieces
2 Tablespoons black tea (china black preferred)
1/2 teaspoon orange extract
1/3 cup sugar
1 cup cream

1. Mix extracts into tea leaves (I mix up several batches worth of tea and spices/extracts so the flavors can mingle in advance).
2. Heat water to boiling.
3. Remove water from heat, add tea and spices.
4. Steep tea until a strong brew is obtained, up to 5 minutes.
5. Strain tea, stir in sugar until dissolved.
6. Pour into glasses over ice.
7. Float 1/4 cup cream over each glass, serve without stirring

Makes 4 glasses.
