Chai Tea Recipe
Chai Tea comes from India. Recipes vary across the region. Some recipes include Cardamon pods or vanilla. If you prefer Cardamon, add 1 - 2 Green Cardamon pods in the first step.
Some recipes include Vanilla bean or extract. Vanilla may be added with the tea. Also, some recipes sweeten the tea using honey or even Stevia (called sweetleaf in India)
There are literally hundreds of variations to the basic Chai recipe, depending on the region within India and the available spices in the region.
Chai Tea Recipe
1 quart water
3 star anise pods
1 stick cinnamon, broken into pieces
1 1/2 tablespoon fresh ginger, sliced fine
8 black peppercorns
5 whole cloves
2 tablespoons black tea (Assam high, or first flush Darjeeling by preference)
1/2 cup sugar
1 quart cold milk
1. Heat water, ginger, and peppercorns to boiling, hold for three minutes.
2. Remove water from heat, add the tea, cinnamon and cloves.
3. Steep five minutes.
4. Strain, stir in sugar until dissolved.
5. Stir in the milk and serve warm.
